Breakfast on the go oats and almond balls (no bake)

Every morning is a rush to make kids ready ,breakfast ready and so on.So I started making this oats and almond balls on the weekend and serve it for breakfast with milk or coffee.This is full of flavor and is also very healthy. I love this.Just take oats almond pulse it  in food processor and form it into balls with peanut butter and dates.


Ingredients

5 pitted dates soaked in 1/4 cup hot water
3/4 cup unsalted almonds
1/2 cup unsweeted toasted coconut flakes
1/2 cup toasted oats
pinch of salt
1 tablespoon peanut butter
1 tablespoon dried cherries or any died fruit of choice


Method

In a food processor combine oats, almonds,coconut flakes, and salt.Add peanut butter, dates,and 3 tablespoon of water.Process until the mixture comes together . Transfer it to a bowl and fold in dried cherries. Form into balls and leave it for few minutes and then serve.

Gluten free pancake

I love pancake with breakfast, and as well as for dinner.This pancake is made with brown rice flour and almond meal.I always make a large bunch of it and freeze it for week day breakfast.Just take it out of the freezer and pop it in the toaster and there it is breakfast.

Ingredients
1 cup brown rice four
1/3 cup almond meal
1 tablespoon corn starch
1 and 1/2 teaspoon baking powder
pinch of salt
1 cup water
2 eggs
1 tablespoon canola oil
1 tablespoon honey
1 teaspoon vanilla
1 cup blueberries
Syrup (optional)




Method

In a bowl add brown rice flour,almond meal,baking powder, corn starch, and salt.In another bowl beat in eggs, water, oil , honey and vanilla.

Brush a non stick skillet with oil. Stir in the wet ingredient with the dry.Mix it together and ladle  1/4 cup of the batter in the skillet.
Flip it when you see bubbles forming around the pancakes and cook it on the other side until lightly brown
Serve it with berries or any syrup of  your choice

Almond meal  -- just place almonds in a food processor and pulse it .

Savory Oatmeal

Tired of eating sweeten oatmeal than try this savory oatmeal with sunny side egg for breakfast or brunch.I love this since I have to watch my sugar .This is easy to cook and is delicious.Savory oatmeal can also be served for dinner.Love this recipe.

Ingredients

Oatmeal
water
minced garlic
shreeded carrots (optional)
salt to taste
pepper to taste
oil
eggs

Method

Add oil in a pan add in garlic stir add in oats toast it for few minutes and than add rest of the ingredient except egg. Cook it until oat is soft and creamy like texture. Place it in a serving bowl.

In a skillet add a little bit of oil , add  eggs one at a time .Season it with salt and pepper .Cover it and let it cook until the yolk is set. Take it out with a spatula and place it on top of the cooked oatmeal.

Gato Pima

Gato Pima is a food fo Mauritius which is made of split peas and spices.It is really tasty and is kind of a street food. Gato Pima is a cross between bart and phulari which are Indian dishes.to me I like to cook it because it is yummy.

Ingredients
1 cup yellow split peas cleaned soaked for 4 hours
4 loved of garlic
2 serrano paper roughly chopped
salt to taste
 few spring onion finely chopped
1/4 cup  cilantro chopped
2 teaspoon ground black pepper
2 teaspoon ground cumin
oil for frying

Method
1 Grind peas in a food processor.Add in garlic ,serrano peppers and pulse it together and if needed add little water.
2 Place the peas mixture in a bowl and add the rest of the  ingredients and mix it together.
3 Heat oil in a pan and take a small amount of mixutre in your hand and make it in balls and fry it.
 4 Drain it on a paper towel.

Kale with Mangoes

Kale is a super food which  can be  cooked and than made into salad or just massaged the kale with lemon juice and make it into salad.Today I am going to satute kale and than combine with with fruits and nuts.

Ingredients
1 bunch of kale washed ,dried and  chopped
2 tablespoon sunflower seeds
1/4 cup   cherries
1 mango chopped
2 cloves of garlic minced
1/2 chopped onion
Finely chopped  pepper of your choice
olive oil
juice of 1/2 of lemon
salt and  black pepper to taste

Method
1  Heat oil in a non stick skillet .Add in onion and cook it for few minutes than add in garlic,  stir  it and add in kale, salt ,black pepper, lemon juice  and mix it to combine.Cover it and cook it for few minutes until it is wilted a little.
2 Place it in a bowl and add mangoes ,cherries, sunflower seeds, and peanuts.Mix everything together and it can be served .

coconut with Berry Popscile

I love popscile when it is  really hot. To make popsicle  we just have to blend fruits with milk or coconut water but this  popsicle  just pour coconut water in the popsicle stand with blue berries and chopped strawberries.

Ingredients
1 can coconut water
1 cup blueberries
strawberries

Method

In a Popsicle stand  put some berries and than pour in coconut water freeze and enjoy

Banana Ice Cream

Banana ice cream is really good for people who are watching their sugar .This ice cream has only 2 ingredients,banana and cocoa powder.Just peel and freeze over ripe bananas and blend it with cocoa powder and than freeze it for couple of hours.


Ingredients
frozen banana (peel, cut in chucks and freeze the banana)
unsweetened cocoa powder

Method
Place the ingredients in a blender and blend it until smooth.
Place it in a glass container and freeze it for couple of hours and enjoy

Crepes

Crepes can be eaten with Nutella, fruits, or with ice cream.This is mostly enjoyed by everybody.I love making crepes where I just  spread it with peanut butter and jelly.Just amazing .

Ingredients
1/2 cup all purpose flour
1/2 cup whole wheat flour
pinch of salt
2 eggs
3/4 cup  almond milk or any milk of your choice
1/2 cup water
3 tablespoon butter melted
cooking spray


Method
1 In a bowl mix together flour,  salt together.In another bowl whisk together eggs, milk,butter and add it to the flour mixture.
2 Add in water and mix it until it is smooth.
3.Leave it for few minutes. Spray a non stick skillet on a medium heat scoop the batter with a 1/3 cup and spread it in the skillet and than lift the skillet and rotate it in circular  motion so it is thinly spread out.Let it cook for few minutes  and take it off the heat.

Oatmeal Energy Bar

Oatmeal bar is a breakfast on the go.This is easy to prepare and is healthy and flavorful.This oatmeal bar is also good for people who watch their sugar .I love this this and make this and keep it in a container for easy breakfast or healthy snack with tae or coffee.Just dry roast oatmeal with sesame seeds chia seeds and bind it together with peanut butter and honey.


Ingredient

2 cup oatmeal
1 cup sesame seeds
1/4 cup dreier cranberries
1/4 cup raisins
1 tablespoon chia seeds
1 cup peanut butter
honey
2 tablespoon coconut oil or 1/2 stick of butter


Method

Dry roast oatmeal, chia seeds, sesame seeds. Take it of the stove and in raisins, and cranberries.
In a soucepan add in oil peanut butter and honey and mix and bring it to boil.Turn it off the stove and add in oatmeal mixture.Place it in a pan covered with pachment paper  and let it cool.Leave it in the fridge for half an hour.Cut it into squares and enjoy.

No Bake Oatmeal Cookies

no bake oatmeal cookie is very good for people who are watching their glucose and also for those who are always o the go. I love this cooke because this has no added sugar and can be ready in few minutes.It is healthy and tasty at the same time.Just take toasted oatmeal with unsweetened coconut ,dates and a banana and blend it all in a food processor. Make it into balls and than flat it with your fingers.

Ingredients

2 cups oatmeal 
4 tablespoon unsweetened coconut
1 big banana or 2 small ones
1/2 cup  pitted dates
1 tablespoon dried cranberries (optima;)
1 tablespoon raisin (optional)

Method
1 Dry roast  oatmeal and coconut in a non stick skillet.Blend it in a food processor  and than put it aside .
2 Add dates to the food processor  and blend it to fine pieces .Add in banana ,oatmeal coconut mixture and and any red fruits and bland it all together.
3 Make it into balls and than flat it with your palm.Leave it for few minutes before  enjoying.

Egg in a hole (acorn squash)

Thinking of eating healthy this year ,egg in a hole is  perfect for brunch. This is easy and it  just cooks in the oven. Only  squash needs some preparation where we have to take out the seeds.This for brunch was really enjoyed by the girls at my home.first place the acorn squash in the microwave to make it soft and then cut in rounds to make a hole. Season it with salt and pepper  and bake it in the oven until it is soft.Very flavorful and will be enjoyed by every one on the table.

Ingredients
Acorn  squash
 1 teaspoon ZA'ATAR seasoning (optional)
salt to taste
pepper to taste
1 tablespoon olive oil
eggs

Method

1 Poke hole in acorn squash and microwave it for 3 minutes to make the skin soft.
2 Cut the squash in round and remove the seeds.
3 Season squash with salt and pepper ,ZA'ATAR seasoning, and  drizzle it with olive oil.
4 Place it in a preheated 350 degree oven until it is tender.
5 Take it out of the oven and place an egg in the circle seasoned with salt pepper.
6 Place it back in the oven until the egg is set
7 Serve it with fruits

Cauliflower Nuggets

Cauliflower is gluten free and can be cooked in different ways to bring out flavors. This nuggets can be served with ketchup ,with ranch or any other sauce of your choice.Cauliflower nuggets can be a side dish with any roasted meat, fish. This can also be an appetizer in any party or just as a healthy snack. Just steam up cauliflower ,blend it in the food processor and form it into nuggets and bake for 25 minutes.

Ingredients
2 cups steamed cauliflower
1 egg
1/4 cup bread crumbs
1/4 cup parmesan cheese
salt to taste
black pepper to taste
1 clove of  garlic minced
1/4 cup ketchup
3 tablespoon sriracha


Method
1 In a food processor blend cauliflower until it is grainy.Add cauliflower to a bowl and add in egg,garic,bread crumbs, cheese,salt and pepper.
2 Mix everything together and than form it into nuggets and place it on a greased baking pan.
3 Bake it on a preheat oven and bake it for 25 minutes flipping the nuggets half way.
4 In a bowl mix ketchup and sriracha  with salt and pepper  to make sauce.
5 Enjoy it while it is still warm

Cream cheese Cake

My daughter and her friends love this cake.They always go to cheese cake factory to buy this cake .I made this cake for the first time and it was tasty and the girls were asking for more.This cake needs cheese, lemon juice, and sugar and bake it and let it cool. Well I used a pie pan to bake this cake rather than spring form pan.

Ingredients

1 stick of  cream cheese
1 cup mascarpone   cheese
1/4 cup sugar or to taste
1 teaspoon lemon juice
1 teaspoon vanilla
3 eggs
pie pan nicely buttered




For Crust
8 gram crackers
1 tablespoon sugar
1/2 stick soften butter


Method
1 In a  blender food processor make a crust place all the ingredients for the crust and blend it together.
2 Place it to the pie pan and  spread it around the pan to make it a nice crust.
3 Preheat the oven at 350 degrees and bake the crust for about 10 minutes.Take it out and let it cool
4 Place every ingredient for the filling in a bowl and mix it with a hand mixer.
5 Pour the fillings in the pie pan with the crust and bake it for about 20 to 25 depending on your oven.
6 Turn the oven off when the middle of the cake  is still soft.Let it cool in the oven with the oven door lit open.
7 Take it out off the oven completely cooled  place it in the fridge to settle down
8 Enjoy

Sugar Cookies

Sugar cookies is really enjoyed during the holiday season. My girls really love this cookie.It is fun to decorated the cookies  and it also makes them to eat and enjoy this festive season.

Ingredients

1 cup soften butter
1/4 cup sugar
1 egg
2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon allspice



Method
Beat butter and sugar together.Add eggs and beat it until fluffy
Stir in flour, baking powder, salt,and all spice until well blended.form in to a dough and
wrap it in plastic. Refrigerate it for 2 hours.
Preheat the oven at 350 degrees.Roll the dough  and use the cookie cutter  to cut the shapes.
Transfer it to the cookie sheet covered with parchment paper bake it for 7 to 9 minutes .
Let it cool and than decorated it with sprinkles or icing of your choice.

Sour Cream Corn Muffin

Corn muffin is good for breakfast and as well as for a side with any soup.I love corn muffin because it is easy to prepare  and it cooks in less than 30 minutes.Mix all the ingredients and place it in the oven and on less than 30 minutes it is ready

Ingredients
1/2 a stick of  melted butter or coconut oil
2 tablespoon coconut sugar
1 egg
1/2 cup sour cream
1/2 cup milk
1 cup self raising flour
pinch of salt
1/4 teaspoon baking soda

Method
Heat oven to 350 degrees.In a bowl add flour, salt, baking soda together.In another bowl mix butter, sour cream, and sugar together.than add in eggs and milk and mix it together.
Add the sour cream mixture to the flour mixture and combine everything together.
Scoop it in the muffin tin and bake it for 20 minutes or until the toothpick inserted comes out clean.

Gluten Free Chocolate Chip Cookies

We all love cookies but this cookie does not have flour but it has mashed banana.People who watch their sugar can also eat this cookies because I used coconut sugar.It is very simple just mash banana, mix it with peanut butter and chocolate chips and bake it for about 9 minutes.


Ingredients

1  banana (large)
1 cup peanut butter
1 cup chocolate chip
1/4 teaspoon almond extract
pinch of salt
1/2 teaspoon baking soda
1 egg
1 tablespoon coconut sugar

Method
1 Preheat your oven to 350 degrees
2 Mash your banana in a bowl.Add in peanut butter and mix it together .
3 Add in baking soda,  egg, salt, sugar, almond extract and combine everything together.
4 Fold in chocolate chip  and with a spoon place it on a parchment covered baking pan
5 Bake for 9 minutes design on your oven
6 Enjoy

Ice Cream Pops

We love to eat ice cream during  the hot summer months.So I decided to make ice cream pops  covered with chocolate .This is very simple and is full of flavor and is really a hit among the children.I like to eat this because it is small and it does not have much calories and people who likes to watch their waist can also enjoy this.


Ingredients

ice cream
melted chocolate
ice cream scoop
nonpareils (decoration)or sprinkles
sticks
coconut oil


Method
Line a pan with wax paper.With a ice cream scoop place ice cream on the wax paper and than put the stick in it.freeze it ,Melt chocolate over double boiler or melt it in microwave with coconut oil. Let the chocolate cool and than dip the frozen ice cream in it and than sprinkle it with nonpareils.Freeze it until ready to serve.

Peanut Butter Fruit Bites

We all snack during the day and I love peanut butter with fruit so I came up with this fruit bites.This is healthy and it does keeps me away from snack that is not good for me.If you love Peanut butter than this snack is for you.Just make peanut butter with any dried fruits and press it gently in a pan and than cut into squares.

Ingredients
8 pitted dates
1 cup chopped dried apricot
3 cups  Cheerios
1 cup peanut butter
1 cup chopped peanuts


Method
1 In a food processor place dates and apricots , pulse it until it is finely chopped.Add in Cheerios and pulse it until it is finely chopped.Add in peanut butter and process it until well combined.
2 Line a pan with wax paper, extending it over the edges. Press the peanut butter mixture in the pan and press it around the pan.Sprinkle with chopped peanuts.
3 Let it sit for 30 minutes and than take the wax paper with uncut bars out of the pan and cut it into squares.

Mango and Banana Ice Pops

This hot summer months ice pops is very refreshing.It is easy to prepare  and there is no cooking involved.I love making ice pops because it is  mostly fruits so it does not  much sugar.Eat  this ice pops and not worry about  spiking your sugar level  for people with diabetics.Just add mangoes and bananas in a blender and blend ,freeze and eat.

Ingredients
1 packet defrosted mango chunks or 1 mango
1 large  ripe bananas
honey to taste
1 can coconut milk or any milk of your choice

Method
Put everything in a blender, blend  and pour it in cups, freeze and enjoy

Egg in a Hole

Breakfast is an important meal of the day.We like to ear toasted bread with scrambled eggs, or  poached eggs and so on, But today I am making egg in a hole with some veggies.Very easy and healthy. Make all of it and than stick it in the oven to keep it warm.Take a piece of bread , take  the middle part out  and drop an egg and cook on both sides.

Ingredients
sliced bread
Eggs
1 cup finely chopped green bell peppers
broccoli pulled in small pieces
salt to taste
black pepper to taste
1.4 cup finely chopped onions
1 teaspoon minced garlic
oil

Method
1. Heat  oil  in a skillet. add in onions cook it for few minutes and than add garlic, bell pepper and broccoli, with salt and pepper. Cook it until  soft. With a knife remove the middle part of the bread  ,
2 . In a unstick skillet add oil and place the bread on the skillet.In the center of the bread place the veggies mixture press it down in the hole nicely and than  carefully place an egg on top of the veggies.Season the egg with salt and pepper.Let it settle and than place the bread {the white center piece} on top of the egg.
3.With a spatula flip the egg with the bread over and let it cook on the other side.
4 Breakfast
