Cauliflower Nuggets

Cauliflower is gluten free and can be cooked in different ways to bring out flavors. This nuggets can be served with ketchup ,with ranch or any other sauce of your choice.Cauliflower nuggets can be a side dish with any roasted meat, fish. This can also be an appetizer in any party or just as a healthy snack. Just steam up cauliflower ,blend it in the food processor and form it into nuggets and bake for 25 minutes.

Ingredients
2 cups steamed cauliflower
1 egg
1/4 cup bread crumbs
1/4 cup parmesan cheese
salt to taste
black pepper to taste
1 clove of  garlic minced
1/4 cup ketchup
3 tablespoon sriracha


Method
1 In a food processor blend cauliflower until it is grainy.Add cauliflower to a bowl and add in egg,garic,bread crumbs, cheese,salt and pepper.
2 Mix everything together and than form it into nuggets and place it on a greased baking pan.
3 Bake it on a preheat oven and bake it for 25 minutes flipping the nuggets half way.
4 In a bowl mix ketchup and sriracha  with salt and pepper  to make sauce.
5 Enjoy it while it is still warm

Cream cheese Cake

My daughter and her friends love this cake.They always go to cheese cake factory to buy this cake .I made this cake for the first time and it was tasty and the girls were asking for more.This cake needs cheese, lemon juice, and sugar and bake it and let it cool. Well I used a pie pan to bake this cake rather than spring form pan.

Ingredients

1 stick of  cream cheese
1 cup mascarpone   cheese
1/4 cup sugar or to taste
1 teaspoon lemon juice
1 teaspoon vanilla
3 eggs
pie pan nicely buttered




For Crust
8 gram crackers
1 tablespoon sugar
1/2 stick soften butter


Method
1 In a  blender food processor make a crust place all the ingredients for the crust and blend it together.
2 Place it to the pie pan and  spread it around the pan to make it a nice crust.
3 Preheat the oven at 350 degrees and bake the crust for about 10 minutes.Take it out and let it cool
4 Place every ingredient for the filling in a bowl and mix it with a hand mixer.
5 Pour the fillings in the pie pan with the crust and bake it for about 20 to 25 depending on your oven.
6 Turn the oven off when the middle of the cake  is still soft.Let it cool in the oven with the oven door lit open.
7 Take it out off the oven completely cooled  place it in the fridge to settle down
8 Enjoy

Sugar Cookies

Sugar cookies is really enjoyed during the holiday season. My girls really love this cookie.It is fun to decorated the cookies  and it also makes them to eat and enjoy this festive season.

Ingredients

1 cup soften butter
1/4 cup sugar
1 egg
2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon allspice



Method
Beat butter and sugar together.Add eggs and beat it until fluffy
Stir in flour, baking powder, salt,and all spice until well blended.form in to a dough and
wrap it in plastic. Refrigerate it for 2 hours.
Preheat the oven at 350 degrees.Roll the dough  and use the cookie cutter  to cut the shapes.
Transfer it to the cookie sheet covered with parchment paper bake it for 7 to 9 minutes .
Let it cool and than decorated it with sprinkles or icing of your choice.

Sour Cream Corn Muffin

Corn muffin is good for breakfast and as well as for a side with any soup.I love corn muffin because it is easy to prepare  and it cooks in less than 30 minutes.Mix all the ingredients and place it in the oven and on less than 30 minutes it is ready

Ingredients
1/2 a stick of  melted butter or coconut oil
2 tablespoon coconut sugar
1 egg
1/2 cup sour cream
1/2 cup milk
1 cup self raising flour
pinch of salt
1/4 teaspoon baking soda

Method
Heat oven to 350 degrees.In a bowl add flour, salt, baking soda together.In another bowl mix butter, sour cream, and sugar together.than add in eggs and milk and mix it together.
Add the sour cream mixture to the flour mixture and combine everything together.
Scoop it in the muffin tin and bake it for 20 minutes or until the toothpick inserted comes out clean.

Gluten Free Chocolate Chip Cookies

We all love cookies but this cookie does not have flour but it has mashed banana.People who watch their sugar can also eat this cookies because I used coconut sugar.It is very simple just mash banana, mix it with peanut butter and chocolate chips and bake it for about 9 minutes.


Ingredients

1  banana (large)
1 cup peanut butter
1 cup chocolate chip
1/4 teaspoon almond extract
pinch of salt
1/2 teaspoon baking soda
1 egg
1 tablespoon coconut sugar

Method
1 Preheat your oven to 350 degrees
2 Mash your banana in a bowl.Add in peanut butter and mix it together .
3 Add in baking soda,  egg, salt, sugar, almond extract and combine everything together.
4 Fold in chocolate chip  and with a spoon place it on a parchment covered baking pan
5 Bake for 9 minutes design on your oven
6 Enjoy

Ice Cream Pops

We love to eat ice cream during  the hot summer months.So I decided to make ice cream pops  covered with chocolate .This is very simple and is full of flavor and is really a hit among the children.I like to eat this because it is small and it does not have much calories and people who likes to watch their waist can also enjoy this.


Ingredients

ice cream
melted chocolate
ice cream scoop
nonpareils (decoration)or sprinkles
sticks
coconut oil


Method
Line a pan with wax paper.With a ice cream scoop place ice cream on the wax paper and than put the stick in it.freeze it ,Melt chocolate over double boiler or melt it in microwave with coconut oil. Let the chocolate cool and than dip the frozen ice cream in it and than sprinkle it with nonpareils.Freeze it until ready to serve.

Peanut Butter Fruit Bites

We all snack during the day and I love peanut butter with fruit so I came up with this fruit bites.This is healthy and it does keeps me away from snack that is not good for me.If you love Peanut butter than this snack is for you.Just make peanut butter with any dried fruits and press it gently in a pan and than cut into squares.

Ingredients
8 pitted dates
1 cup chopped dried apricot
3 cups  Cheerios
1 cup peanut butter
1 cup chopped peanuts


Method
1 In a food processor place dates and apricots , pulse it until it is finely chopped.Add in Cheerios and pulse it until it is finely chopped.Add in peanut butter and process it until well combined.
2 Line a pan with wax paper, extending it over the edges. Press the peanut butter mixture in the pan and press it around the pan.Sprinkle with chopped peanuts.
3 Let it sit for 30 minutes and than take the wax paper with uncut bars out of the pan and cut it into squares.

Mango and Banana Ice Pops

This hot summer months ice pops is very refreshing.It is easy to prepare  and there is no cooking involved.I love making ice pops because it is  mostly fruits so it does not  much sugar.Eat  this ice pops and not worry about  spiking your sugar level  for people with diabetics.Just add mangoes and bananas in a blender and blend ,freeze and eat.

Ingredients
1 packet defrosted mango chunks or 1 mango
1 large  ripe bananas
honey to taste
1 can coconut milk or any milk of your choice

Method
Put everything in a blender, blend  and pour it in cups, freeze and enjoy

Egg in a Hole

Breakfast is an important meal of the day.We like to ear toasted bread with scrambled eggs, or  poached eggs and so on, But today I am making egg in a hole with some veggies.Very easy and healthy. Make all of it and than stick it in the oven to keep it warm.Take a piece of bread , take  the middle part out  and drop an egg and cook on both sides.

Ingredients
sliced bread
Eggs
1 cup finely chopped green bell peppers
broccoli pulled in small pieces
salt to taste
black pepper to taste
1.4 cup finely chopped onions
1 teaspoon minced garlic
oil

Method
1. Heat  oil  in a skillet. add in onions cook it for few minutes and than add garlic, bell pepper and broccoli, with salt and pepper. Cook it until  soft. With a knife remove the middle part of the bread  ,
2 . In a unstick skillet add oil and place the bread on the skillet.In the center of the bread place the veggies mixture press it down in the hole nicely and than  carefully place an egg on top of the veggies.Season the egg with salt and pepper.Let it settle and than place the bread {the white center piece} on top of the egg.
3.With a spatula flip the egg with the bread over and let it cook on the other side.

Chia Seed Pudding

Breakfast is a very important meal of the day and it is very easy to  to achieve by chia seed pudding.This is healthy ,delicious, and satisfying  as well as low in calorie. I love this pudding because I make this in the evening and leave it to chill overnight .  This pudding must sit overnight to thicken.Just few ingredients and  breakfast is ready in the morning.I love this.

Ingredients
1 can unsweetened coconut milk
1 cup greek yogurt
1/2 teaspoon vanilla
1/2 cup chia seeds
1 tablespoon honey
fruits of your choice

Method

1.In a bowl, stir together milk, yogurt, vanilla, honey. add in chia seeds ,mix it  and divide the pudding equally among the jars or bowls.
2. Cover and  chill it overnight. Before serving topped it with fruits of your choice.

Ice Block

Growing up on an island I loved to eat ice block.I used to make ice block with milk or any juice  by adding sugar  and fruits.Fiji is a tropic country so my friends and i would just eat ice cream or home made ice block.Just cant forget those days growing up with friends and eating and playing around the neighborhood. Ice block is very much appreciated in the warm weather.I just took milk, added sugar and food color .

Ingredients

2 cups milk
sugar to taste
1 small banana
1 /2  teaspoon red food color
cups to freeze the ice blocks
popsicle sticks


Method

Add all the ingredients in a blender ,blend and freeze.

Mixed Berry Scones

Scones are delicious and it can be eaten straight out of the oven or they can be freshened in  the microwave . Scones freezes very well too.Any left over freeze it and reheat it when required.  Scones can also be served with soups or over tea .I love scones because it it very simple to prepare.Just mix flour ,sugar, butter together  and bake it until for 10 to 12 minutes.

Ingredients
2 cup self rising flour
1/3 cup sugar or to taste
Pinch of salt
1 cup milk
1/4 cup dried mixed berries or any dried fruit of your choice



Method
 Sift flour ,sugar, salt and mix ti well in a bowl. Add in berries and mix it well. Cut butter through  until crumble.Add in milk little by little and make it into a dough. Knead it lightly. Roll the dough out  on a floured surface and cut it in even size pieces.Brush them lightly with little butter or milk. Bake at 425degrees for 10 to 12 minutes or until golden.

Parmesan Crusted chicken

Chicken is a staple in most of our homes and it can be cooked in many different ways. Parmesan coated chicken is full of flavor and is very easy to prepare.I love making this for my family.Just coat the  chicken breast with mixture of bread crumbs and parmesan cheese with spices and cook it on both sides until it is brown on both sides and then place it on the oven on low temperature to keep it warm.Serve it salad or roasted potatoes on the sides.

Ingredients

4 boneless and skinless chicken breast pounded out thin
1/2 cup panic bread crumbs
1 cup grated parmesan cheese
1 teaspoon cayanne peeper
2 teaspoon ground black pepper
salt to taste
1 teaspoon papirika
olive oil

Method
1. Pound the chicken thin and than brush it with olive oil , season it with salt and pepper.In a bowl combine bread crumb ,cheese,1 teaspoon black pepper,cayanne pepper ,paprika, little bit of salt.
2 .Coat the chicken with cheese mixture and cook it on a cast iron skillet until cook through and brown on both sides.
3.Place it on a sheet pan and place it on a low oven to keep it warm.Serve it with salad or roasted potatoes .

Blueberry smoothie bowl

Smoothie bowl is a new spin on a classic brunch or breakfast.This is very simple and can be prepared in few seconds.Just add in all the ingredients in a blender and blend it until it is smooth.I love this type of smoothie bowls because it is really healthy and it also fill you up.

Ingredients

2 cups frozen blueberries
3/4 cup coconut water
1 banana cut into chunks
1/3 cup coconut flakes
1/4 cup chopped peanuts or any other nuts of your choice
1/4 teaspoon ground ginger
chopped mangoes

Method

Add blueberries, coconut water,  peanuts, banana and ginger to a blender and blend until smooth.
Divide the smoothie into bowl and top each bowl with coconut flakes, and mangoes

Veggie Wonton

Veggie wonton is one of my families favorite .Dip it in soy sauce or any other sauce  and enjoy the flavor in your mouth.The crunchy veggies and the sesame oil  is a very good combination.Just not eat one or two but  enjoy six or dozen at one sitting.Love it.Just finely chop cabbage, add salt to it and let it rest for half an hour and than fill in your wonton wrapper.


Ingredients
wonton wrapper
finely chopped cabbage 1/2 of cabbage
salt to tast
1/4 cup shredded carrots
1 teaspoon sesame oil
1 tablespoon ginger garlic paste
1 tablespoon ground black pepper
1 teaspoon paprika
 1 teaspoon oil
little bit of water

Method
1. in a bowl add cabbage ,add in little bit of salt and let ti rest for about 30minutes.
2.Must notice the cabbage is tender, and now add all the other ingredients until paprika.Mix it together and fill in your wonton wrapper sealing the edges with water.
3.In a non stick fry pan add oil ,place the wonton and let it brown ,then add in water and cover the pan with tight fitting lid and let it cook for few minutes.
4.Serve it for snack or as an appetizer.

Mason Jar Salad

Mason Jar salad is another way of packing lunch which  looks very appetizing and is easy to carry..I pack my lunch using mason jar and people in the break room always makes a comment oh you salad looks good. It is really simple ,just layer the greens with any protein of your choice into the jar with the dressing at the very bottom.
I used apples, lettuce, red and green bell pepper, sunflower seeds, carrots with shredded chicken.Just pour the dressing of your choice or use lemon juice.apple cider vinegar, mustard, salt and pepper with olive oil ,mix and pour at the bottom of the the jar.

Coconut crusted chicken

Chicken is a staple in many Fijian  household.There is many ways to cook chicken but In Fiji I grew up eating coconut crusted chicken with cassava(yucca),It is very easy to prepare and id full of flavor.Coconut (copra)is one the main export of Fiji with Sugar.It is mainly grown on the smaller islands of Fiji .We used to use freshly grated coconut but here I just used the unsweetened shredded coconut. Island of paradise with beautiful beaches and tasty food. I mixed shredded coconut with little bit of panko bread crumbs with spices and then pat the chicken with this mixture.


Ingredients
4 chicken breast pounded thin
3 cups of shredded coconut
1 cup panko bread crumbs
2 tablespoon olive oil
1 teaspoon paprika
2 teaspoon black pepper
salt to taste
1 teaspoon dried basil
1 teaspoon garlic powder
1 teaspoon chili powder
Method
1.  Season the chicken with salt and pepper, and massage it with olive oil .
2.In a dish mix bread crumbs, coconut, chili powder, garlic powder, basil,  salt and pepper and paprika.
3.Place the chicken in the coconut mixture and pat it nicely so it is coated really nicely.
4. Heat oil in a cast iron skillet and add the chicken ,cook on both sides ,turning once and until cooked through.
5.Serve it with any veggie of your choice.

Turmeric Milk

Turmeric milk is good for cold  weather .It provides warmth to the body and if taken before bedtime it makes you sleep calmly .I grew up drinking this when I was a kid .My mom used to make this if I had a cough or a cold.It also soothes the itchy throat from cough or cold.

Ingredient
Milk
turmeric
pinch of nutmeg
honey or sugar to taste
sliced of grated ginger

Method
Place everything in a pot.Bring it to a boil, reduce heat  and let it simmer for 5 minutes until combine.Strain the milk and enjoy

Carrot- Apple soup

Carrot is one vegetable that promotes eye skin and bone health.This stormy winter soup is very comforting to me and is also affordable.I like using apple instead of potatoes  in soup because when blended it acts as a thickening agent.I really enjoyed this soup ,it is tasty, and healthy .

Ingredients

3 large carrots peeled and cut in chunks
1 apple peeled and chopped
1 cup chopped mushrooms
1 serrano peper chopped
1 tablespoon ginger ,garlic paste
1 teaspoon red chili flakes
salt to taste
1 tablespoon peanut butter
vegetable stock
1 teaspoon olive oil


Method

1 Heat oil in a pot, combine everything carrots, ginger-garlic paste, apples, mushrooms, pepper, chili flakes, salt, peanut butter, and stock.
2 Bring to boiling ,reduce to simmer covered until vegetables are fork tender.
3 Blend in a blender until smooth, return it back to the pot and check for seasoning.
